Part 01 · What your machine needs
Chloride and espresso machines: the limits makers set
Most makers that give a chloride number put it at 30 ppm or less. Every figure we've saved, in the makers' own words.
The short answer
Most makers that give a chloride number set it at 30 ppm or less: La Marzocco, Slayer, Lelit and Ascaso among them. Decent Espresso and Meticulous ask for under 10 ppm. These are machine makers' figures, not an SCA standard.
Why makers care about chloride
Chloride is a salt that occurs naturally in water. Makers that set a limit give the same reason: corrosion of metal parts inside the machine.
From the maker
La MarzoccoLa Marzocco machines (Technical Center Water Calculator; names no model)
“Chloride higher than 30ppm: Effects on espresso: increase the perception of sourness and enhance phenolic compounds and astringency. Effects on equipment: chlorides cause severe phenomenon of pitting corrosion.”
From the maker
MeticulousMeticulous Espresso
“Chloride is the enemy of stainless steel. Even at modest levels, chloride ions drive corrosion inside espresso machines. Keep it under 10 ppm, and never remineralize with calcium or magnesium chloride. Use sulfate and bicarbonate based mineral products instead.”
Every chloride figure we've saved
Most makers that give a number put it at 30 ppm or 30 mg/l. For chloride, the two units mean the same amount. Decent Espresso and Meticulous ask for under 10 ppm. Synesso gives a range for the ES.1.

These are machine makers' figures. The 30 ppm line in particular comes from makers like La Marzocco, Slayer and Lelit, not from the Specialty Coffee Association.
The figure can change by model
La Marzocco's manuals for the Linea Micra and the current Linea Mini ask for under 30 mg/l. The manual for the Linea Mini made from 2015 to 2022 said under 50 mg/l. Use the figure for your own model and its manual. Each machine's page shows which one applies.
Chloride is not chlorine
The words look alike, but they're different things. Chlorine and chloramine are disinfectants cities add to tap water. Makers that mention them set much lower figures:

Finding your chloride number
Many city water reports list chloride, often among the "secondary" or "aesthetic" figures. Not all do. Of the city reports we hold, the 2025 reports from Dallas Water Utilities and San Antonio Water System don't list it. How to read your water report shows the figures we found.
A hardness strip or a TDS meter won't read chloride. You need a chloride test, such as a drop-count kit. Our test kits page lists what each kit measures.
If your water is over your maker's chloride limit, the water check shows the ways to change that one measurement that your maker's guidance supports.

Questions
Is the 30 ppm chloride limit an SCA standard?
No. It comes from machine makers such as La Marzocco, Slayer and Lelit, and we attribute it to them.
Is chloride the same as chlorine?
No. Chloride is a salt that occurs naturally in water. Chlorine is a disinfectant cities add. Makers set separate, much lower figures for chlorine.
How do I find out my water's chloride?
Look in your city's yearly water report, often among the secondary or aesthetic figures. If it isn't there, use a chloride test. Hardness strips and TDS meters don't read it.
Mineral & Steam does not certify water as safe, guarantee protection from scale, corrosion or equipment damage, or recommend a machine as an overall purchase. It compares the water information you provide with documented manufacturer water requirements and shows the basis and limits of that comparison.
