Part 03 · Changing your water
Should I use a water softener with my espresso machine?
Some makers call for one above a set hardness. Others are wary of the sodium kind. Here is where each stands.
The short answer
Some makers call for one, and others ask for caution. Nuova Simonelli says a softener must be installed above 3 grains per gallon for the Oscar II. Several ECM and Profitec manuals say water from sodium-based ion-exchange softeners isn't recommended. La Marzocco and Ascaso-USA advise caution.
Makers that call for a softener
Some makers set a hardness level above which they want a softener. Nuova Simonelli puts it at 3 grains per gallon for the Oscar II:

“If water hardness exceeds 3gpg a water softener must be installed.”
LUCCA, La Pavoni, Gaggia and Quick Mill also suggest a softener when water is hard, some with a number and some without:

Makers that advise against, or ask for caution
Other makers are wary of the most common kind of home softener, which swaps calcium and magnesium for sodium. Several ECM and Profitec manuals say so in the same words:
From the maker

The two positions aren't always far apart. A maker can want softer water and still prefer a method other than sodium exchange to get there.
Softeners and chloride
Chloride matters to many makers because of corrosion. Decent Espresso separates two kinds of softener here:
From the maker
Decent Espressothe DE1 and Bengle
“Anion‑exchange softeners (used to reduce nitrate or tannins, or for dealkalization) can substantially increase chloride levels. Typical salt-based (or potassium chloride-based) water softeners do not significantly increase chloride levels in the water.”
A softener, or a filter cartridge
Some manuals treat a softener and an in-tank filter cartridge as two ways to reach the same hardness, and name a dealer for anything more:
From the maker
ECMCasa V
“When necessary, make use of a water softener / water filter cartridge in order to reach an adequate hardness level. If these measures are insufficient, a prophylactic descaling of the machine may be required. Contact your specialised dealer before undertaking this measure. Follow our descaling instructions (see page 23).”
If your machine's maker names its own cartridge, this list shows it. For a plumbed-in machine, see plumbing in.

Questions
Is a water softener the same as a water filter?
No, though some manuals name them together. ECM's Casa V manual suggests "a water softener / water filter cartridge" to reach the right hardness.
Does a softener raise chloride?
Decent Espresso says typical salt-based softeners don't significantly increase chloride, but anion-exchange softeners can.
Mineral & Steam does not certify water as safe, guarantee protection from scale, corrosion or equipment damage, or recommend a machine as an overall purchase. It compares the water information you provide with documented manufacturer water requirements and shows the basis and limits of that comparison.
